Putting some mojo into Barcardi’s mojito

If you’re going to mix up 10,000 gallons of a cocktail, it’s probably worthwhile to make sure you’ve got the recipe right.

So when the Bacardi Bottling Corp. plant in Jacksonville, Fla. is getting ready to whip up an industrial-sized batch of its popular Mojito pre-mixed highball, the company uses a blend of science and art to mix its premium rum, flavors and special natural ingredients that are about a predictable as a Caribbean summer shower.

Bacardi’s staff of technicians and production personnel provide the experience and art, and an instrument from X-Rite Inc. provides some of the science, says John Scussel, lab supervisor for the beverage plant.

“We can’t just follow the exact same recipe for ever batch of Bacardi Mojito that we mix because of the incoming color variations of a few ingredients,” Scussel says.  ”Using natural ingredients can make final product appearance notoriously difficult to control.

“A small change in lot-to-lot color of these can make quite a difference in our Mojito, and our consumers demand consistency in not only taste, but appearance in our products.”

The Bacardi plant has begun using an X-Rite Color i7 benchtop spectrophotometer in transmittance mode and Color iQC software to measure 2-liter samples of test batches and determine just the right recipe for a full production batch.

The technology may have applications with other products of Bacardi Ltd., the world’s largest privately held spirits company and a manufacturer and marketer more than 200 brands and labels of popular products such as Bacardi rum, Grey Goose vodka, Dewar’s blended Scotch whiskey, Bombay Sapphire gin, and Martini vermouth.  Bacardi Ltd. products can be found in more than 100 markets around the globe, and Bacardi and cola is ranked as the number one cocktail in the world.
